This famous Indian dish marinated chicken with spices and grilled on Tandoori, a cylindrical clay oven, which is now popular all over the world.
Here is how to make it!
INGREDIENTS
10 unit Delight Chicken Drumsticks
1 Tbsp. paprika
1 Tbsp. curry powder
1 Tbsp. ground cumin
1 Tbsp. ground coriander
½ tsp ground turmeric
½ tsp cayenne pepper
3 Tbsp. ginger, chopped
7 garlic cloves, chopped
¼ cup vegan Greek yogurt
1 tsp Lime zest
2 tsp Lime juice
½ cup vegetable oil
2½ tsp salt
1 jar mango chutney, for serving
INSTRUCTIONS
Thaw the Delight Chicken Drumstick. For easier preparation, you can keep in refrigeration the day before cooking.
In a small pan over moderately low heat, toast the paprika, garam masala, cumin, coriander, turmeric and cayenne pepper, stir 2 mins until spices are fragrant. Transfer spices to a blender, along with the ginger, garlic, vegan Greek yogurt, lime zest and juice, oil and salt; process until smooth.
Place the Delight Chicken Drumsticks in a large bowl and toss with the marinade. Cover and refrigerate for 30 mins.
Preheat the oven to 450°F. Line a baking sheet with heavy duty aluminum foil and set an oven-proof rack over top. Spray the rack with nonstick cooking spray or grease with vegetable oil.
Arrange the chicken on the rack, leaving 2 inches between the pieces. Spoon any marinade left in the bowl evenly over the drumsticks. Roast for 20 minutes, turning once midway through, until the chicken is cooked through. Serve with mango chutney on the side. Enjoy!
