Mango Chutney Vegan Chicken

Ingredients

10.5 ounce pack Delight Soy Vegetarian chicken nuggets     
2 cups celery, cut on the bias
2 cups carrots, cut on the bias
2 cups Zucchini, cut on the bias
2 Tbsp. Mango-Ginger Chutney
1 tsp Vegetable Oil
1/4 tsp salt
Optional: 2 tbsp chopped or silvered almonds              
Chutney sauce (yields 2 cups)
15 oz. can mangos in syrup
2 Tsp Curry Powder
1 Tsp Lemon juice
1 Tsp Ginger (minced)
Dash Salt              

Directions

1.	Cut Delight Soy Nuggets into strips and set aside.  
2.	Wash & Cut 1 inch pieces (on the bias) of the Carrots, Zucchini and Celery & set aside. 
3.	For the Mango Chutney Sauce mix all ingredients in blender or food processor.
4.	Sauté all vegetables in olive oil starting with carrots; add 2 Tbsp water to speed the carrots.
5.	When vegetables are half done (still crispy), add “Delight Soy: Chicken nuggets to the vegetables and heat through.
6.	Add the Mango sauce and season with a dash of salt
7.	Serve over rice with slivered almonds on top.
