Soy Sliced Beef and Black Soybean Wrap

1 1/2 tablespoons olive oil
2 cloves garlic, minced
1 cup diced red bell pepper
1 cup diced yellow bell pepper
1 cup zucchini, cubed
1 cup yellow squash, cubed
1 cup chopped red onion              
2 teaspoons ground cumin
1/4 teaspoon salt
1/8 teaspoon pepper
1 1/2 cups Delight Soy Sliced Beef
15 ounces canned black soybeans, rinsed & drained
4 tablespoons soy cheddar cheese, grated
4  10-inch flour tortillas
4 tablespoons chopped fresh cilantro              


Heat olive oil in a large skillet over medium-high heat.  Add garlic and cook for about 30 seconds.  Add the bell
peppers, zucchini, squash, and onion.  Sauté for about 8 minutes or until vegetables are slightly tender.  Stir in the
cumin, salt, pepper, and TVP and continue cooking for about 2 more minutes.  Place the beans in a large bowl.  Mash them
coarsely with a fork.  Add in the vegetable mixture and combine well.  Place a tortilla in front of you.  Put
approximately 1/4 of the mixture along the bottom of the tortilla.  Sprinkle 1 tablespoon of the cilantro and 1
tablespoon of the cheese on top of the mixture.  Roll up the tortilla starting at the bottom end closest to you.  Cut in
half diagonally.  Repeat with remaining tortillas.
