Vegan Pepper Steak

Servings: four, 8 ounces each        

Ingredients

12 ounces green bell pepper, two large, chopped into wedges
8 ounces tomato, one large, chopped into wedges
1 cup onion, sliced into chunks
6 ounces Delight Soy Sliced Beef              
1 teaspoon minced garlic, about one clove
3 tablespoons vegetable oil
1 teaspoon soy chili paste
1 teaspoon cornstarch combined with ˝ cup water              

Directions

Cut the peppers and tomato into small to medium wedges.  Heat the vegetable oil over high heat in a wok or skillet.  Add
the onion, garlic, chili paste, and stir fry for a moment.  Add Delight Soy Sliced Beef and pepper, and cook for a
couple of minutes.  Next add the tomato and cook briefly.  Mix the starch and half-cup of water, adding it to the pan
and stirring well, and then sauté briefly to combine and thicken slightly.  Take care not to over-cook.
